Saison Dupont, Belgium, $13.90

Since 1844, this beer has been brewed in the Dupont farm-brewery, during the winter time, with a second refermentation in the barrel. Considered “the classic” among the Belgian season beers with the finest aromas and a strong bitterness, this beer is a thirst-quencher with no equal, just the way it was created. A refermentation in the bottle, which will continue for a long time in your cellar, results into this complex and particularly aromatic beer. Floral and citrus flavours begin this taste explosion with a peaty and grassy finish.

Dupont Redor Pils, Belgium, $11.90

The Rédor, a bottom fermentation “pils” beer, filtrated but not pasteurised. The Rédor is a pure malt “pils”, which means we only use the barley malt as starch with no added grains, so  the Rédor becomes a tasteful “pils” with an initial burst of subtle honey notes finishing with a crisp refreshing hoppy bitterness.

Magic Hat Winter: Encore — An American Wheat I.P.A., Vermont USA $12.90

A genre-blending mix of an American wheat beer and a traditional India Pale Ale. Encore is hopped  and dry-hopped with Simcoe and Amarillo hops, and has a pleasant grapefruit aroma that compliments its subtly sweet malty backbone. Grab a lighter and get up front!

Hawthorn Premium Pale Ale, Australia $12.90

An all malt beer with no added sugar, chemicals or preservatives. Crisp and fresh, it perfectly compliments spicy Asian food where its balance of citrus lifts the seafood notes of dishes such as crab in ginger and chilli.

Mountain Goat Hightail Ale, Australia $12.90

An English inspired amber ale. It has a rich malt body and floral hop aroma. It has a terrific toffee finish with slightly sweet flavours.

Awarded gold medal in the Asia India Pale Ale category at Beerfest Asia 2012. All American Pale Ale with generous amounts of Liberty, Glacier & Columbus hops added three times during the boil and then again during conditioning. The mild malt sweetness can barely keep up with this hop rush!

Seedy Goat Coffee IPA Mountain Goat Cross Breed Series with Seven Seeds Speciality Coffee, Australia $25.90 (640ml)

The Seedy Goat isn’t your typical coffee flavoured beer with traditional “coffee flavour” or bitterness but rather fruity notes that complement the Tasmanian Galaxy and US Cascade hops selected by chief brewer Dave Bonighton.

The Wok & Barrel always has been about the food. Good food and drink served in a relaxed casual space to be shared amongst good friends and family.

That’s why, the idea of a Supper Club was always at the back of my mind. That as soon as we had settled into a nice little groove with the day to day operations, we’d start holding a monthly small intimate gathering of friends who appreciated eating well. The concept was simple, I’d cook off-the-menu dishes, stuff that we didn’t have on the daily menu of The Wok & Barrel, invite 13 people and we’d gather to eat, drink, talk and laugh.

For the first Supper Club, I put together a simple but hearty menu of stuff that I liked to eat. First course was simple, Curry Onion Rings, Whitebait Fritters with Roasted Miso Mayo and 3 Cheese (Ricotta, Cheddar & Mozzarella) &
Sausage (freshly made by Oh Deli) White Pizza.

My guests were smart and paced themselves well as they knew that there were 3 more courses to go!

2nd course was a Hae Mee inspired Prawn Capellini topped with Crispy Lard bits. Fried with a prawn infused stock, lard, garlic and chilli, this was a good source of carbs for my friend Desiree Koh who’d just completed the gruelling half iron man/person that afternoon.

The main course was everyone’s favourite. This was a dish that I dreamt up a year ago but didn’t put onto The Wok & Barrel’s menu. It is a special treat and a little something that I cook up for myself and my better half. A doublecut (2 pork chops on bone) kurobuta pork chop which I marinate for 48 hours. It is thick and juicy and has fat marbling through the entire chop. This breed of pig, called the black pig, Kurobuta or Berkshire, has a delicate sweet nutty flavour and is said to be the Wagyu of pork.

I sear the chop off on a cast iron pan, so that there is a nice char on the meat, and then cook it until pink in the oven. Served with fries and a pear and walnut salad, we had people gnawing on both chop bones.

Since the Supper Club, I’ve had my friends ask if I’d put the pork chop on the menu. You can advance order them, giving me at least 48 hours to get them in and marinate them. Email me at thewokandbarrel (at) gmail. I’ve decided to call it The Bad Boy Pork Chop. 😉

We finished dinner with a dessert of Pineapple Tart with Coconut Ice Cream.

I’ve already planned the menu for the next Supper Club which will be held on 22 April, 7pm. All I’ll say is that there will be Wagyu for the main, a lot of it!
